The winery was founded in the 80s but its current organisation dates back to the 90s. The main building is located near Cavalliera street, is slightly uphill, airy and with good exposure and with a partly clay soil. Cavaliera is mainly a family- run company, five hectares of vineyard with different varieties: Lambrusco Grasparossa, Pignoletto, Trebbiano, Malbo Gentile, are grown organically and with spurred cordon. The Lambrusco Grasparossa grape, which is grown only in the territory of Castelvetro, lend the designation DOC and PGI to our wines. Through careful traditional winemaking, respecting natural and organic techniques combined with modern technologies we produce unique traditional method wines. Controlled temperature and indigenous yeasts for the first fermentation enhance aromas and flavors leaving a typical sedimentation in the second fermentation in the bottle which is removed at the end of the process by “degorgement à la volè ”.
